Vegetarian Russian Salad Recipe

Oliver salad or Russian salad is traditionally made of boiled potatoes, boiled carrots, green peas, onions, eggs and diced chicken. It is dressed with mayonnaise with an addition of salt, pepper and mustard. Here is a different take, a vegetarian Russian salad recipe. Boiled potatoes, carrots, peas and french beans are dressed with mayonnaise with a dash of salt and pepper. This salad can be served with a meal or served separately.  To make this an instant recipe, boil and store the vegetables. If refrigerated, the vegetables can be heated in a microwave at low intensity before giving it the mayo dressing.


  • Potato: 1
  • Carrot: 1
  • French beans: 3-4
  • Green Peas: 1/4 cup
  • Mayonnaise
  • Pepper
  • Salt
  • Lime
  • Coriander leaves


  • Peel the potato and carrot and cut them into small pieces
  • Cut the beans into small pieces


  • Boil the veggies until they are cooked. This also be done in a microwave
  • Once the vegetables are done drain the water
  • Take about half cup of mayonnaise or enough quantity to dress the salad and mix with the veggies
  • Sprinkle some salt and pepper
  • Serve with garnish of coriander leaves or a slice of lime


  • To make this recipe completely vegetarian use egg-less mayonnaise
  • The quantity of mayo can be varied as per taste
  • Whites from boiled eggs can be cut into pieces and added to the recipe
