Vegetable Sambar

If an advertisement  were written for vegetable sambar the it would sound like this: A spicy and tangy dish with the proteins of the dal and the goodness of a mixture of vegetables.  Vegetable sambar is served with rice as the strong, pungent and tangy taste goes well with the blandness of rice. The sambar can also be served with idlis, dosas and chapatis.

Vegetables and dal

Add the tomato pieces to the dal and pressure cook with the vegetables, keeping the veggies in a separate vessel.

Vegetable Sambar Recipe


  • Toor dal: 1 cup
  • Veggies(carrot+beans+potato): 1 cup
  • Tomatoes: 2
  • Turmeric powder: 1/4 tsp
  • Asafoetida
  • Tamarind(seedless): 1 tbsp or a small ball
  • Sambar powder:  2 tsp
  • Red chilli powder: 1/2 tsp
  • Clarified butter/ghee: 1-1 1/2 tsp
  • Salt

For Tempering

  • Mustard seeds: 1 tsp
  • Cumin Seeds: 1 tsp
  • Red chilies: 2-3
  • Oil: 2-3 tbsp
  • Curry leaves: 10-12


  • Soak the dal in hot water for 15 mins
  • Cut the tomatoes into small pieces
  • Clean and cut the veggies into small pieces
  • Put the dal in a cooker, add the turmeric powder and tomatoes
  • Place the veggies in a bowl in the same cooker and pressure cook
  • Soak the tamarind in a little warn water


  • Heart oil in a wok and add the mustard seeds
  • Once the seeds crackle add the red chilies,  curry leaves and asafoetida
  • Reduce the heat and add the tamarind juice
  • Add the sambar powder and cook till the raw smell is gone
  • Include the veggies and mix throughly
  • Add the dal
  • Add some water and allow the dal to cook on low heat
  • Add salt to taste
  • Add the clarified butter/ghee
  • Serve hot


  • Regular Onions or sambar onions can be added to the dal
  • For regular onions:Finely chop an onion and add to the oil after adding the mustard seeds
  • If you are using the sambar onions the take four to five onions, clean them and pressure cook the onions with the dal and tomatoes
