Vegetable Pulao

An all time favorite and an easy to prepare dish. Veg pulao is one the best “One Pot Meal”. For quick cooking use a pressure cooker or go the traditional way of slow cooking. Perfect for the lunch box, rice plus vegetables. So quickly prepare the vegetable pulao and dig in. Curd raita, mirchi ka salan and pickles are good sides for this dish.

This is how the dish goes. Firstly the spices, heat oil in a thick bottomed vessel and fry the bay leaf, cardamom, cloves etc.SpicesAdd in the chopped onions to the spices.Veg Pulao 5Add the veggiesmix veggies

Vegetables(cauliflower, french beans, carrot, Green peas)
Onion: 1 large
Turmeric Powder
Green chillies: 4
Ginger-garlic paste
Turmeric powder

Bay leaf: 2
Cloves; 4
Cardamom: 2
Cinnamon bark: 1 small piece


Finely chop the onions
Wash the rice and allow it to soak in the water
Cut the vegetables into small pieces
Slit the green chillies

Heat 4 tbsp of oil in a pressure cooker
Reduce the flame and add the chopped onions
Allow the onions to fry till they are tranclucent
Add the ginger-garlic paste and mix
Add a pinch of turmeric powder
Add the spices and mix
Add in the vegetables and allow it to cook on medium flame
Add the rice and mix
Add water
Add 2tbsp of ghee(more if required)
Add salt to taste
Mix the contents of the cooker and close the lid
keeping the flame on low allow the pulao ingredients to cook( For a two whistle count)
Once cooked genlty turn the pulao so that all the vegetalbles are equally distributed
Server hot with raitas or gravies or pickles
