Eggless Mawa Cupcakes

Cardamom flavored rich cupcakes

I got introduced to the delicious mawa cake during my travel in Pune. Many of the bakers there are Parsi and the Mawa Cake is one of their specialty. The Irani cake have a lot of dairy content but is not too sweet. A perfect tea time snack. I changed things a little bit and made cupcakes that have no egg in it.

The ingredients have three dairy products. Butter, milk and of course mawa or khoya. While all the other ingredients are whisked together, the mawa in folded into the cake batter to get that texture. The mawa can also be beaten in to make a smooth & airy batter. Easy to make & absolutely delicious.

Eggless Mawa Cake Recipe

Ingredients

  • Mawa / Khoya: 1/2 cup
  • Condensed Milk: 1/4 cup
  • Butter: 1/4 cup
  • Milk: 1/4 cup
  • Sugar: 1/4 cup
  • Flour: 1/2 cup
  • Baking Powder: 1 tsp
  • Baking Soda: 1/4 tsp
  • Cardamom Powder: 1 tsp

Method:

  • Melt the butter & add it to a bowl
  • Add condensed milk to it and start whisking the contents
  • Continue whisking and keep adding the sugar followed by the milk, flour, baking powder, baking soda and the cardamom powder
  • Crumble the mawa using your fingers. Add to the bowl and mix the ingredients with a large spoon or ladle
  • Take the muffin tray and place the cupcake liners (also called cupcake paper/cups/wrapper)
  • Pour the cupcake batter to fill half of each cup. This batter tends to rise a lot due to the soda and the whisking
  • Bake in a pre-heated over (i.e oven at 300’C ) at 180’C for 20 mins
  • The cupcakes will start to brown at the top. Use a skewer to check if they are done
  • Turn off the heat and leave the cupcakes in the oven for about 5 mins
  • Take the tray out and let the cupcakes cool before removing them

Bajra Wheat Cake Recipe

Jowar Cake

This is a spicy cake. Having said that that this Bajra or Pearl millet cake is a take on the Semolina Cake. I am trying out cooking and baking using various millets and this is one such experiment using bajra flour. The other millet cake recipe is my Ragi Chocolate Cake.

Bajra Wheat Cake Recipe

Ingredients

  • Bajra/ Pearl Millet Flour: 1/2 cup
  • Wheat Flour: 1/2 cup
  • Yogurt: 1/2 cup
  • Carrot: 1(grated)
  • Grated Ginger: 1 tsp
  • Chili Powder: 1/2 tsp
  • Baking Soda: 1/2 tsp
  • Sesame seeds: 1 tsp
  • Salt

For Tempering

  • Mustard seeds: 1 tsp
  • Cumin seeds: 1/2 tsp
  • Oil: 3 tbsp + oil for greasing

Preparation

  • In a large bowl mix the bajra, wheat flour, yogurt and the vegetables
  • Mix in the grated ginger, chili powder and baking soda
  • Add little amount of water,if required, so that a batter is formed
  • Heat oil in a small wok/pan for tempering
  • Reduce the heat and add the mustard seeds and cumin seeds. Allow the mustard seeds to crackle and the cumin seeds to turn slightly brow.
  • Turn off the heat. Add the tempering to the batter and mix well
  • Grease a baking tin.
  • Pour in the batter and sprinkle the sesame seeds on top.
  • Bake for about 30 mins at 150’C
  • Check if the cake is done by poking in a skewer/ knife. If the skewer/ knife comes out clean then the cake is done
  • Allow the cake to cool on a rack
  • Cut into slices/ pieces and serve

Ragi Chocolate Cake Recipe

Ragi Chocolate Cake

Ragi chocolate cake is made using finger millet flour or ragi flour and whole wheat flour to give a healthier cake alternative. The ragi chocolate cake recipe is egg-less and has two variations. You can use oil & yogurt or you can use condensed milk. I am using whole wheat instead of refined flour and adding some ragi flour to it.

Ingredients:

  • Wheat Flour: 1 cup
  • Ragi/ Finger Millet Flour: 1/2 cup
  • Condensed Milk: 200 gm
  • Sugar: 1/2 cup
  • Cocoa Powder: 2 tbsp
  • Baking Soda: 1/2 tsp
  • Baking Powder: 1 tsp
  • Milk: 1/2 cup
  • Vanilla essence: 1 tsp

Method:

  • Mix the wheat flour, ragi flour, cocoa powder, baking powder and baking soda
  • Pour the condensed milk in a bowl. Add the sugar and mix well. A food processor can also be used for mixing
  • Add the vanilla essence
  • Keep adding the flour mixture in small quantities
  • Keep adding the milk with the flour to maintain the batter consistency
  • Once all the ingredients are in keep whisking the batter
  • Grease a baking tin and pour the cake batter
  • Pre-heat the oven for about 10 mins. Bake the cake for 30 mins at 180’C
  • Check the cake by using a skewer or a clean knife. The skewer or knife has to come out clean.
  • Let the cake cool for 5 mins before removing from the tin
  • A layer of chocolate sauce can be applied to the cake before cutting it into slices

Eggless Whole Wheat Cake Recipe

Using condensed milk the eggless whole wheat cake recipe is a mix-pour-bake recipe. Wheat is a healthier alternative to refined flour and adding some dry fruits make it even more interesting.

Condensed Milk Mix the butter and the condensed milk

Whole Wheat Cake

Ingredients

  • Wheat Flour: 1.5 cups
  • Butter: 200gm
  • Condensed Milk: 200 gm
  • Milk: 1/2 cup
  • Sugar: 1/2 cup
  • Cashew nuts: 6-8
  • Baking Powder: 1 tsp
  • Baking Soda: 1/2 tsp
  • Vanilla Essence: 1 tsp

Method

  • Sieve the flour with the baking powder and soda
  • Mix the condensed milk, butter and sugar in a food processor or by hand
  • Split the cashews or cut them into quarters
  • Add the vanilla essence
  • Keep adding the flour in small amount and keep stirring while adding the flour
  • Keep adding milk to maintain the consistency
  • Grease a tin and pour in the cake batter
  • Bake the cake in a pre-heated oven for 30-40mins at 180′”C
  • Once the cake is done allow it to cool for 10mins before removing the cake and cutting them into slices

Semolina Cake

After watching Anjum Anand bake this cake on her show, Indian food made easy, I was tempted to try it out myself. It took me a couple of tries before I got it right. The cake is a mix of semolina and yogurt along with some vegetables. The spices include ginger and red chili powder. The cake mix is tempered ( given a tadka) of mustard and cumin seeds for the extra flavor. Its a mix and bake recipe of some basic Indian ingredients.

Eggless CakeAlright my pure vegetarian friends here is some thing for you. A basic recipe for the egg-less cake. You can customize this by including nuts and dry fruits of your choice. Add couple of teaspoons of cocoa powder and you have a chocolate flavored cake. You can further customize the cake by applying a layer of icing on the cake. The cake is easy to make. No fancy ingredients. Its just a mix, pour and bake cake. Something that should be on you easy-cook list.
