Sprouts Fry Salad Recipe

I was asked to share a recipe on air during the food segment. Something that was a healthy, tasty and easy to make. This recipe was the first one that came to mind. Sprouts fry salad is easy to make once you have the sprouted moong dal or mung beans. The sprouts are tempered which might bring down the healthy part down by a few notches. The recipe is to just temper the sprouts with some curry leaves & mustard seeds. Add some desiccated coconut or grated carrot to brighten up the salad and a dash of lime juice for the tangy-ness.
Sprouts Fry Salad Recipe

Ingredients:

  • Sprouted moong dal/mung beans: 1 cup
  • Mustard seeds: 1/2 tsp
  • Grated Carrot: 3 tbsp
  • Curry leaves: 6
  • Green Chili: 1(slit)
  • Lime Juice: 1 tsp
  • Desiccated Coconut: 1 tbsp (optional)
  • Salt
  • Oil: 1 tsp

Method:

  • Heat the oil in a wok
  • Add the mustard seeds and let them crackle
  • Reduce the flame and add the curry leaves and green chili
  • Add the sprouts and mix well
  • Add the desiccated coconut and mix
  • Add salt to taste
  • Add the grated carrot and mix
  • Turn off the heat
  • Just before serving add the lime juice and mix the salad

Note:

  • Grated carrot can also be used just for garnishing
  • Pepper powder can be used in which case the green chili can be avoided
  • Some sev can be sprinkled on top to make it a little more interesting
