Pav Bhaji Recipe

The pav toasted with some butter along with some hot bhaji with a sprinkle of lime juice is absolutely divine.

I don’t know why but I was always kinda intimidated to try out pav bhaji. It is one the most popular Indian snack. But it is more than a snack it more of a mini-meal to me. My mom make amazing Pav Bhaji in a very short amount of time so I took her recipe tried it out and it came out really well. Making pav bahaji is really simple. The pav is ready made, bought from the bakery. The bhaji is thick curry of mashed vegetables. The hero of the recipe is the masala or spices. I used the pav bhaji masala available at the supermarket.
Putting it simply its like this: Cook the vegetable(pressure cooking is more convenient). Mash the veggies and cook with spices. Serve with pav or pav pieces which have been slightly toasted with butter.

Pav Bhaji Recipe

Ingredients:

  • Pav: 12
  • Lime: 1
  • Onion: 1

Ingredients for bhaji:

  • Potatoes: 2
  • Carrot: 1
  • Cauliflower: 1/2 cup
  • Fresh Peas: 1 cup
  • Onion: 1 large
  • Tomatoes: 2-3 large
  • Capsicum: 1
  • Pav Bhaji Masala: 2 tbsp
  • Garam Masala: 1/2 tsp
  • Red Chilli Powder: 1 tsp
  • Turmeric Powder: 1/2 tsp
  • Coriander leaves: 1 bunch
  • Cumin Seeds: 1 tsp
  • Butter

Preparation of the Bhaji:

  • Pressure cook the potatoes, carrot, cauliflower and peas
  • Mash the cooked vegetables
  • Finely chop the tomatoes, onion, capsicum & coriander leaves

Method:

  • Melt two tablespoons of butter in a wok
  • Add the cumin seeds and fry
  • Add the chopped onions and fry for a half a minute on medium heat before adding the turmeric powder
  • Add the chopped tomatoes and mix well
  • Add the red chilli powder and stir by keeping the heat at medium
  • Add the capsicum and cook for a minute
  • Add pressure cooked and mashed vegetables and mix well
  • Add the garam masala powder, pav bhaji masala & salt powder and mix well
  • Keep the heat at low and keep cooking. Use a masher to mash all the ingredients in the wok
  • Keep using the masher and continue cooking for 5-8 minutes

Serving:

  • Heat a pan or tawa
  • Cut the pav in half or small pieces and apply butter on the pav
  • Toast the pav on the pan/tawa until it turns slightly brown. Remove and place it on a plate
  • Pour the bhaji in a small bowl or at the side of the plate. Sprinkle some lime juice on top
  • Serve the pav-bhaji and keep some chopped onions. You can also add some butter on the bhaji
