Mushroom and Egg Salad Recipe

Sneaking out of the office on a weekday for a long lunch is not easy. But all the trouble is truly justified if you good company for lunch & of course great food. One such lunch escapade introduced me to this salad. A salad which has mushrooms & eggs. The dressing which I had was made of light mayo with the right amount of flavors. I did try the salad over the weekend and it tastes heavenly. The mayo which I used for the dressing was diet mayo. The salad itself is very simple to make but makes quite an impact on the table.

The main ingredients: Eggs, mushrooms, mayo & coriander leaves

Mushroom Egg Salad Recipe

Ingredients:

  • Eggs: 2
  • Mushrooms: 8-10
  • Mayonnaise: 1/4th cup
  • Onion: 1 medium sized
  • Garlic Clove: 1
  • Coriander leaves: 1 bunch
  • Lemon Juice: 1 tsp
  • Olive oil
  • Salt
  • Pepper powder

Preparation:

  • Boil the eggs. Dice the boiled eggs into small pieces
  • Clean & cut the mushrooms into small pieces
  • Soak the mushrooms in hot water for about 10 mins & drain the water
  • Chop the onions finely. Chop the coriander finely

Lets do it

  • Heat 2 tbsp of oil in a skillet
  • Saute the mushrooms for about 10-12 mins along until the mushrooms turn golden brown & no moisture remians
  • Add the coriander and fry for a minute more.
  • Transfer the mushrooms to a mixing bowl
  • While the mushrooms cook, fry the chopped onions in 2 tsp of oil on medium heat
  • Fry for about 10 mins until they onions turn golden. Press in the garlic
  • Add the eggs & fried onions to the mushrooms in the mixing bowl
  • For the dressing mix the mayo & the lime juice
  • Stir the dressing into the salad & mix until it is evenly coated
  • Add salt & pepper for the seasoning
