Grilled Carrot Sandwich

My mom used to make these delicious grilled sandwiches with had stuffing made of grated carrots inside it. The stuffing is made by frying grated carrot with onions, mustard seeds, green chilies and mint leaves. Use butter or cheese on the bread slices and place the stuffing in between. We had this old sandwich toaster, which opened up into a long L-shape. We could load one sandwich at a time and place it directly on the flame. You always had to be careful and attentive so that it never got burnt. As it wasn’t non-stick we had to use oil or butter to prevent the sandwich from sticking to the grill. The taste was amazing the slightly burnt bread with the smell of melting butter on it.

I am making the same sandwich on a some what fancier grill. I am using brown bread as the taste of brown bread goes well with the carrot stuffing.Although it is a non-stick grill surface I am still going to apply some butter on the outer side of the sandwich also so that I get the taste of the butter and the slightly burnt color on the sandwich. Applying butter between the slices gives a rich taste. Cheese(spread or slices or pieces) or mayo or sandwich spreads can also be used.

Recipie

Ingredients:

  • Carrots: 2
  • Onion: 1
  • Mustard seeds: 1/2 tsp
  • Green chillies: 3-4
  • Mint leaves
  • Oil: 2 tbsp
  • Bread
  • Butter
  • Cheese or Mayo or Sandwich spread (optional)
  • Grated Paneer/ Cottage cheese (optional)

Preparation:

  • Finely grate the carrots
  • Chop the onion to small pieces
  • Clean and chop the mint leaves and green chillies

Method:

  • Heat oil in a wok
  • Reduce the heat and add the mustard seeds and allow them to crackle
  • Add the chopped onion and fry for a minute on medium heat
  • Add the chopped green chillies and chopped mint leaves
  • Add the grated carrot and mix thoroughly
  • Add the grated paneer (optional)
  • Allow the carrots to cook on low heat this should take about 8 mins
  • Keep stirring and add some more oil if necessary
  • Once the carrots are done turn off the flame
  • Take two slices of bread and apply butter to the slices
  • Spread the carrot stuffing evenly on one slice and then cover it with the other
  • Apply some butter on the outer side of the sandwich and grill the sandwich
  • Once done remove the sandwich and cut along the diagonal and serve with sauce or mint chutney

Note:

  • Green peas can also be added to carrot while making the stuffing
  • Mashed potatoes can also be used
  • Grated paneer can also be added to the stuffing
  • Cheese flavored or plain can also be used between the sandwiches
