Egg Bhurji

On a lazy Sunday morning or after a long day at the office this is my all time emergency dish. Easy to make, tasty and goes with pretty much everything bread, chapatis, rice. Make a sandwich, roll it in a chapati or mix with rice as egg rice. Dig in….

Onion- 1medium sized
Ginger-Garlic paste-1/4tsp
Green chilli-1
Turmeric powder-1/4tsp
Coriander leaves
Mint leaves


  • Finely chop the onions and green chillies
  • Heat 2tbs oil in a wok
  • Add the chopped onions and fry till golden brown
  • Add the ginger-garlic paste and stir fry for half a minute
  • Add the chopped chilies and a few mint leaves
  • Add required amount of salt and mix well
  • Add the eggs (or beat the eggs separately and add to the mixture)
  • Spread the liquid eggs over the frying onions and allow it to stand for a half a minute
  • Stir the mixture very well so the eggs get scrambled
  • Keep the bhurji on medium heat for a few minutes
  • Garnish with chopped coriander leaves
  • Serve hot
