Brinjal Raita

Raita is a side for most Indian meals. This recipe used brinjals as a key ingredient. The brinjals are fried with a few spices and added to yogurt. The brinjal raita goes well with chapatis, pulav etc.

Fry mustard seeds and urad dal

Turmeric powder and red chilies added

Brinja pieces are added to the mix

Once cooked the brinjal pieces get soft

Add yogurt to the cooled mix

Ingredients:

  • Brinjal: 7-8
  • Mustard seeds: 1/2 tsp
  • Urad dal: 1/2 tsp
  • Red chilies: 3-4
  • Turmeric powder: 1/4 tsp
  • Yogurt: 5-6 tbsp
  • Oil: 1tbsp
  • Salt

Preparation:

  • Cut the brinjals into portions of two or four. Keep the cut brinjals in salt water to prevent it from blackening due to oxidation

Method:

  • Heat oil in a wok
  • Add the mustard seeds and urad dal and fry for a minute on low heat
  • Add the turmeric powder and red chilies
  • Add the brinjal pieces and cook on low heat
  • Add salt to taste
  • Once to brinjal pieces are cooked turn off the heat.
  • Add the yogurt and mix well. The raita is ready to serve
