Bhindi Fry 1Another workday morning. I have to take my own lunch else I have to survive on the not-so-good canteen food. I turn to a classic, the bhindi/okra fry. An India classic and an every day dish, okra fry, like most veggie fries, is easy to make. Tastes amazing with roti.

Before the cooking lets get to cleaning. You have to wash the okra before cutting it. Since it has a little slime in it the okra gets really messy if you wash it after cutting. Get rid of the head and tail of the okra and cut the body. I cut the okra into tiny pieces but you can also cut the vegetable along the body into long slits.Cut BhindiI like to add in some urad dal or white lentils to the hot oil along with the mustard seeds. The urad dal when fried gives an flavor that gives a kick to most dry veggie fries. Add in a tiny pinch of asafoetida powder to the hot oil.   • Bindi/Okra: 10-12
  • Urad Dal: 1tsp
  • Mustard Seeds: 1/2tsp
  • Green Chillies: 3-4
  • Curry Leaves
  • Oil
  • Salt
  • Asafoetida powder


  • Cut the okra into small pieces or slit them into long portions
  • Slit the green chillies


  • Heat about 2tbsp oil in a wok
  • Add the urad dal and mustard seeds
  • Stir the seeds
  • As soon as the urad dal starts to turn brownish add a tiny pinch of asafoetida powder
  • Add in the green chillies and few curry leaves
  • Add in the okra pieces
  • On medium flame keep stirring the contents and cook until its done. This should take about 15mins. Cooking on low heat takes a little more time but results in some well cooked and delicious dished.
