Aloo Bajji Recipe

Aloo bajji also know as aloo pakoras are a great tea time snack specially in the monsoon. The bajjis are potato slices dipped in a spicy gram flour batter and deep fried.

Ingredients:

  • Potato/ Aloo: 1 large
  • Gram Flour/ Besan: 1 cup
  • Chilli powder: 1/2 tsp
  • Turmeric Powder: a pinch
  • Rice Flour: 2 tbsp
  • Ajwain / Carom seeds: 1/4 tsp
  • Baking Soda: a pinch (optional)
  • Salt
  • Oil for deep frying

Preparation:

  • Wash, peel and cut the potato into slices. Using a knife is prefered as a slicer will give very thin slices
  • Soak the potato in water to prevent it from blackening
  • Mix all the dry ingredients. Keep adding water until the batter reaches a dripping consistency

Method

  • Heat oil in a wok for deep frying
  • Dip the potato slice in the batter and dunk them in the hot oil
  • Fry until golden brown
  • Drain the excess oil on an absorbent paper
  • Sprinkle some chat masala or serve hot with chutneys or sauces

Note

  • Rice flour is added to make the bajjis crispy
  • The batter can be spiced up with some garam masala or ginger-garlic paste or hing
